Ingredients

  • Olive oil
  • 1 pound ground chicken
  • 1 Tablespoon garlic, minced
  • 1 batch homemade taco seasoning (see below)
  • 1/4 cup brown sugar
  • 1 can (15 oz) black beans, undrained
  • 1 can (15 oz) kidney beans, undrained
  • 1 can (15 oz) corn, undrained
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 small ( 8 oz) can tomato sauce
  • HOMEMADE GLUTEN-FREE TACO SEASONING:
  • 1 Tablespoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon red pepper flakes (adjust to taste)
  • ¼ teaspoon dried oregano
  • 1½ teaspoon ground cumin
  • 1 teaspoon salt (or to taste)

Instructions

  1. In a large stock pot or Dutch oven over medium heat, add a drizzle of olive oil. Add the minced garlic and stir for up to 1 minute, or until it becomes fragrant. Be careful not to burn it.
