  • 3 empty jars full of water (for diluting sauce)
  • 1 green bell pepper, seeded and chopped
  • 1/2 red onion, chopped
  • 1 cup sliced mushrooms
  • 1 cup baby tomatoes, cut in quarters (or 1 can diced tomatoes, undrained)
  • 1 package of Italian sausage (check for allergens, use ground turkey or plant-based for alternatives)
  • 1 cup sliced turkey pepperoni, sliced in quarters (ensure it’s allergy-friendly)
  • 8 fresh basil leaves, chopped (or 1/2 T dried)
  • 1 T dried oregano
  • 3/4 cup of dried, gluten-free rotini (or your favorite small gluten-free pasta)
  • Shredded mozzarella cheese (optional, if your diet allows, or use a dairy-free alternative)

    On your stovetop, brown and crumble the Italian sausage until it’s thoroughly cooked through. Drain any excess grease to keep the soup light and then transfer the cooked sausage into the slow cooker with the vegetables.

    Add the aromatic fresh or dried basil and oregano to the slow cooker. Pour in the entire jar of pizza sauce, then use three empty jars from the pizza sauce to measure and add water. This ensures you get every last bit of flavor from the jar and provides the perfect liquid consistency for your soup.

    *NOTE: Should you find yourself craving this soup but forgot to use your slow cooker, don’t despair! You can still prepare this recipe on the stovetop. Just like with the slow cooker method, add the cooked gluten-free pasta to individual bowls before serving to maintain its ideal texture.*
