Ingredients

  • ¾ cups vanilla rice milk
  • ¾ cup buckwheat groats
  • ¼ cup cornstarch
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • 2 Tablespoons brown sugar
  • ½ teaspoon vanilla extract
  • ¼ cupcreamy SunButter
  • 1 banana, ripe

Instructions

  1. Place the ingredients, in the order above, in a blender. Blend well until everything is smooth. Pour batter into a greased waffle iron. Cook until the dough is cooked through. Waffles will be soft and thick and slightly brown when done. Serve warm with your favorite vegan butter, maple syrup, fruit or powdered sugar. Follow your waffle iron manufacturer’s directions.
