  • Sear the Meat: For an extra layer of flavor, I recommend searing the pork shoulder on all sides using the Instant Pot’s “Sauté” function before adding the liquids and spices. This creates a delicious caramelized crust.
  • Quarter the Meat: It helps immensely to cut your pork roast into quarters or even smaller chunks (roughly 2-3 inches). The less thick the pieces, the easier and more efficiently the pressure can penetrate and tenderize the meat, ensuring even cooking.
  • Cooking Time: Depending on the size of your roast and how large you cut the pieces, pressure cook for approximately 50-60 minutes on high pressure.
  • Natural Pressure Release (NPR) is Key: This is arguably the most crucial step for tender meat in the Instant Pot. The longer you can allow for a natural pressure release (NPR), the better the meat will be. I recommend a minimum of 20-30 minutes of NPR, and ideally, letting it go for a full natural release. This gradual depressurization allows the meat fibers to relax and reabsorb juices, preventing it from becoming tough or dry. Avoid a quick release unless absolutely necessary, as it can shock the meat and make it less tender.
  • Shred and Sauté (Optional): Once shredded, you can return some of the pork to the Instant Pot with a little of the cooking liquid and use the “Sauté” function to crisp up some of the edges, mimicking carnitas-style pork.

Literally my favorite taco EVER. These tender, slow-cooked pork tacos are so simple, it seems crazy they have as much flavor as they do. The pork falls apart beautifully and is incredibly juicy. This recipe yields plenty for leftovers, so you’ll be happy for days! Naturally gluten-free and dairy-free, this is a perfect meal for feeding a crowd with diverse dietary needs. Make sure to serve it with my cilantro lime rice for the ultimate experience!

Ingredients

FOR THE PORK:

  • 6 Tablespoons of lime juice (fresh or bottled)
  • 1 Tablespoon honey
  • 1 Tablespoon olive oil
  • 2 Tablespoons chili powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2-3 lbs. boneless pork shoulder roast (also known as picnic roast or Boston butt)

FOR THE PICKLED RED ONIONS:

  • ⅓ cup lime juice (fresh or bottled)
  • ⅓ cup red wine vinegar
  • ⅓ cup granulated sugar
  • 1 Tablespoon salt
  • 1 jalapeno, seeded and diced
  • ½ medium red onion, thinly sliced

Instructions

  1. TACO INSTRUCTIONS:

  3. Season the Pork: Pour the 6 tablespoons of lime juice and the 1 tablespoon of honey over the pork roast. Evenly sprinkle the chili powder, ground coriander, ground cumin, 2 teaspoons of salt, and 1/2 teaspoon of black pepper over the roast. Ensure the pork is well coated with the seasonings.
  4. Cook: Place the lid securely on your slow cooker. Cook on LOW for 6-8 hours, or until the pork is incredibly tender and easily falls apart when prodded with a fork. The exact time may vary based on your slow cooker and the size of your roast.
  5. Prepare Pickled Red Onions: While the pork cooks, prepare your pickled red onions following the instructions below.
  6. Shred the Pork: Once the pork is cooked to perfection, carefully remove it from the slow cooker and place it in a large bowl or on a cutting board. Using two forks, shred the pork, discarding any excess fat as you go. The meat should be very tender and easy to shred.
  7. Combine with Juices: Return the shredded pork to the slow cooker pot and stir it thoroughly into all those delicious, flavorful cooking juices. This will keep the pork moist and infuse it with even more flavor.
  8. Serve: Serve the succulent shredded pork generously over warm corn tortillas. Garnish with the prepared pickled red onions and any other desired toppings such as guacamole, fresh cilantro, and pico de gallo. Don’t forget a dollop of creamy guacamole for that extra richness!   11. Prepare Brine: In a small saucepan, combine the ⅓ cup lime juice, ⅓ cup red wine vinegar, ⅓ cup granulated sugar, 1 tablespoon salt, and diced jalapeno slices. Place the saucepan over medium heat and bring the mixture to a low boil, stirring occasionally until the sugar completely dissolves.
  12. Combine: Carefully pour the hot liquid mixture over the thinly sliced red onions in the heat-safe container. Ensure the onions are submerged in the liquid.
  13. Cool and Chill: Allow the mixture to cool at room temperature for about twenty minutes.
