- 1/2 cup coconut oil, softened
- 1 cup sugar
- 2 cups gluten-free flour
- 1 1/2 tsp. baking soda
- 1/2 tsp. xanthan gum (omit if your gluten-free flour already has it in the blend)

- 2 Tablespoons brown sugar

Be sure to let the bread cool for ten minutes in the pan, then allow it to finish cooling on a wire rack to finish setting up. It’s hard to wait, but helps the texture a lot.
