A zesty side dish that compliments just about any protein to round out a deliciously bright meal. No worrying about boiling over, as this is done in the instant pot. Fresh lemons and some select spices make this rice anything but boring. This dish is naturally free of: wheat, gluten, dairy, egg, fish, shellfish, peanuts, tree nuts and sesame. Making it free of the 8 of the top 9 allergens, with a soy-free option and vegan option.
Ingredients
- 2 cups long grain rice (uncooked)
- 1 Tablespoon olive oil
- 1 tsp onion powder
- 1 tsp jarred minced garlic clove (or two garlic cloves)
- 2 lemons, juice of (PLUS zest of one of the lemons)
- 2 and 1/4 cups water
- 4 tsp chicken bouillon
- 1/4 tsp salt
- Pepper, to taste
- 1/2 tsp dried dill
Instructions
- Plug your Instant Pot in and prepare the inner pot.
- Remove the lid from the Instant Pot.
- Add all of the listed ingredients – rice, olive oil, onion powder, minced garlic, lemon juice and zest, water, bouillon, salt, pepper, and dill weed – to the inner cooking pot. Stir well to combine everything.
- Place the lid back on the Instant Pot, ensuring it is securely in the locked position.
- Make sure the steam release valve is set to the ‘sealed’ position. (Note: some newer Instant Pot models have valves that automatically seal).
- Press the ‘Rice’ button. The Instant Pot will take a few minutes to come to pressure. Once the correct pressure is reached, it will automatically begin a 12-minute countdown for cooking.
- After the 12-minute cooking cycle is complete, allow the pressure to naturally release for an additional 5-7 minutes. The Instant Pot will display an ‘L’ followed by a countdown indicating how long it’s been since the cook time finished. This natural release time is crucial for perfectly fluffy rice.
- Once the natural release period is over, carefully move the steam release valve to the ‘venting’ position to release any remaining pressure. If the float valve has not dropped, this will allow it to do so.
- Carefully open the lid (be mindful of residual steam) and gently stir and fluff the cooked rice with a fork.
- Serve this delicious Instant Pot Mediterranean Lemon Rice immediately as a vibrant side dish with your favorite protein and fresh vegetables for a complete and satisfying meal!
